Mountain Dew Jelly

Hello! I thought for my first post I'd share my cousin's recipe for Mountain Dew jelly. Citrus flavored and simple to make.

3 1/4 cup Mountain Dew
2 T lemon juice
4 1/2 cups granulated sugar
1 pkg Sure Jell pectin

Pour soda & lemon juice into a 6 or 8 qt pot. Bring to a boil & allow it to boil for 3 mins. Let cool slightly then follow the Sure Jell directions. Process for 10 mins in a boiling water bath.

Holy crap. I think I may have to try making jelly from a bunch of different sodas! Coke, Orange, Grape, Strawberry, Ginger Ale, Root Beer (ooh I bet that one would really be good!), Cream Soda, etc.

Not very nutritious, but good for desserts an such.

I think I love you.

I've been on a jelly making kick lately (made Banana Jam, Blueberry Butter, & Guanabana Jelly), and my other half and I have stopped drinking soda (Mt. Dew being our poison of choice), however we still have some sitting around, tempting us.

TIME TO MAKE MOAR JELLY~!

It's not cheating if we eat it right? ;)

Yup, made it based off of this recipe.

It is fan-fucking-tastic on a PB&J sammich.

Does the Mt Dew keep its high caffeine content during the process? Because if it does, I'm totes doing this with some Nos and it will become a breakfast staple.

I would assume that it keeps a good deal of it. It isn't very water soluble, and it doesn't break down to other substances in heat.
